Teff Butterscotch Oat Drops

What you need
- 1 cup margarine, softened
- 1/2 cup White sugar
- cup brown sugar
- eggs
- 1 tsp. vanilla
- 2 cups Teff (I use 1 cup light and 1 cup dark)
- 2 tsp. xanthan gum
- 2 cups rolled oats
- 1 tsp. each baking soda, baking powder and salt
- 2 cups butterscotch chips (can substitute chocolate chips)
How to make it
- Combine margarine and both sugars in bowl.
- Cream well. Beat in eggs one at a time then add vanilla.
- Measure in remaining ingredients and mix.
- Drop by spoonfuls onto ungreased baking sheet. Bake at 350 degrees for 8 to 10 minutes.
- Makes 6 dozen
